Healthy Holiday Snacks

When you or your kids start snacking over the holiday it's sometimes things filled with sugar and covered with colorful icing.

Eating healthy snacks this winter can still be fun, while still tasting like your favorite Christmas staple.

KHQA's Hailey Vetterlein spent Wednesday morning with dietitian Jen Kamps discussing healthy snack options for the holidays.

Those snacks included No-Bake Gingerbread Bites, Peppermint Cocoa Bites, and Peppermint Mocha Bites.

They also made healthy snacks with a few kids.

Even the kids agreed that they should be eating healthy at their age.

"If they get junk food they will get lazy and they won't do anything," said 10 year old Madison Loos.
"They can stay in shape and they can live longer," said 10 year old Urban Venvertlogh.

Jen Kamps is holding a class called "Winter Holiday Snacks," to help families make healthy snacks for the holidays.

That class is Saturday, December 15th at the Blessing Wellness Center.

It runs from 9:30-10:30 a.m.

This class is limited to 20 participants and registration is required.

Peppermint Cocoa Bites

  • 2 cups pitted dates
  • 1 cup walnuts
  • 4 Tbsp cocoa powder
  • 1/4 tsp salt
  • 1/8 tsp peppermint extract
  • 5-7 mini candy, canes crushed

Put all ingredients except candy canes in a food processor. Process until smooth. Place the crushed candy caned into a shallow bowl. Roll the date mixture into balls and then roll in the crushed candy canes to coat.

No-Bake Gingerbread Bites

  • 8 oz dried pitted dates
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/16 tsp allspice
  • 1/16 tsp ground cloves
  • 1/16 tsp ground ginger
  • Finely chopped pecans, optional for rolling

place all ingredients in the food processor. Process until it reaches desired consistency, scraping the bowl down once or twice if needed. May need to add a drop or two of water if date are really dry. Roll date minutes into balls and lay on parchment paper or wax paper to try. Roll into pecans if desires. These balls freeze well. Thaw before consuming.

Peppermint Mocha Bites

  • 1/2 cup crunchy nut butter
  • 1/4 cup honey
  • 2 Tbsp cocoa powder
  • 1-2 Tbsp ground coffee
  • 1/4 tsp peppermint extract
  • 1 cup raw old fashioned oats
  • 3 Tbsp mini semi-sweet chocolate chips

In a large bowl, mix together nut butter and honey. Place in microwave for 20 seconds to warm and melt a little. Stir in cocoa powder, coffee, peppermint extract, and salt until blended. Ass oats and chocolate chips and mix until incorporated. Roll out into balls and place on parchment paper.

Fruity Candy Cane

  • Bananas
  • Strawberries
  • Kiwi (optional)

Slice and arrange into a candy cane shape, alternating fruits.

Grinch Poppers

  • Strawberries
  • Green grapes
  • Banana slices
  • String cheese cut small
  • Toothpicks

Using a toothpick, arrange starting from bottom to top; grape, banana slice, strawberry and string cheese.
